Porcupine Ball Soup
Serves 6-8

2 lbs lean Ground Beef
1 medium onion, chopped
2 cups minute rice
1/2 tsp salt
1 egg
3 10-oz cans condensed tomato soup
3 10-0z cans water (use cans to measure)
- Combine beef, onion, rice, salt and egg in medium-sized bowl, and form into small (bite-sized) balls (1-1.5 “)
- in large cook pot, combine soup and water and bring to boil
- Gently drop meatballs into boiling soup Cover and simmer over low heat for 30 minutes or until meatballs are cooked through.
